Easy recipe: fish curry

There are times when you don’t want to spend too much time stir frying behind the stove, but just let the dish simmer while you can do other useful things (like watching cooking videos on YouTube).

So here is a simple simmer dish:

Ingredients:

  • 300 gram fish (Pangasius filet)
  • 1 tomato
  • 1 zucchini
  • 1 carrot
  • 2 spring onion
  • 1 onion
  • 1/2 white cabbage
  • bamboo sprouts (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons curry powder / masala powder (I got this from an Indian friend)
  • 2 tablespoons oil
  • (about) 3 cups of water (or use coconut milk)

1 | Cut everything into bite size pieces. I added bamboo shoots as ingredient, but you can use any vegetable you have at home.

2 | Add oil in the pan. Stir fry the ingredients which can simmer long first: green onion, garlic, bamboo, onion, zucchini and fish. Fish can be put in later, because it is done really fast, but here I put it in first. Add 2 tablespoons of curry powder. Stir fry for 5 minutes.

3 | Add the rest of of the vegetables. Add 2 cups of water, till almost all vegetables are soaked in the water. Add 1 teaspoon of salt and 1/2 teaspoon pepper. Trust your feeling about the salt and pepper. Actually, I have no idea how much salt I used. Add salt little by little and taste.

4 | Simmer for 10 minutes and your fish curry (soup) is done! To make it more creamy and thick, you can coconut milk instead of water.

5 | Serve with rice.

Kimmade ~ Vietnamese food in Utrecht

I proudly present my second foodvlog with Lazy Penguin. This time we visited a Vietnamese restaurant in Utrecht: Kimmade. Kimmade serves delicous snacks and meals at Kimmade Streetfood. About a month ago they have opened a bigger restaurant: Kimmade Food Village. Here you can sit down, relax and eat delicious food. They also serve alcohol, which they don’t serve at Kimmade Streetfood.

Thank you for having an interview with us Kim Sang! We were very happy to hear the story from the owner himself. Today I will keep this post short, since Lazy Penguin already showed a lot in the video. Here are some photos.

The food

The food is refreshing, crispy, salty, little bit sour (can be more sour for me). The food has a soft taste, but strong herbs; a soothing and healthy meal.

Recipe: Chicken congee ~ After dentist food

Last week I went to the dentist and I made myself some soft food so I could easily swallow without a lot of chewing. Here is the chicken congee recipe. Healthy, because it has chicken soup ingredients. Safe, because you can make it very mushy by cooking the soup for a long time.

Mom’s wisdom: congee is good for you, because you can digest it easily. It’s also good for your skin, it will become smooth and shiny, just like the congee. I don’t know if that is really true, but I like to believe it.

In the past I often ate congee at home, usually without all the vegetables and meat ingredients. Only rice… but that is a bit too plain for me. I like things salty. But don’t put it too much salt guys, too much salt is not good for your heart. Well enjoy the recipe! Talk to you guys the next time 🙂

Delft: The Haka – your healthy dose of food

The Haka is a small restaurant which serves healthy salads and other healthy food. I know it is part of the Pure Family, which is created by the owners of Hills & Mills.

I believe The Haka is the first restaurant to offer healthy food to your home (near Delft). In The Netherlands we can order from the website Thuisbezorgd.nl, but the restaurants on there are mainly fast food stuff. If you want to eat healthy, there is not a lot of choice.

About a year ago I ordered from their website with a few friends. We wanted to eat something healthy. Their website is very clear and I love the pretty photos of the food.

This week I thought of eating at the restaurant to check it out. To my surprise it was very small. There is only a counter where you can order and see the ingredients of the salads and drinks they offer. Upstairs is the kitchen I assume. There is a high table near the window inside and 4 sitting spots outside.

The food

I had a chicken salad and a vegetable soup. The chicken salad was nice, it had a light sauce, don’t know which one. The soup was very strong from taste, I liked it. My friends ordered a vermicelli Thai dish, it was quite light from taste. It could have been stronger, since Thai food is usually quite strong from taste.

Too bad they don’t have a lot of warm choices, because I still prefer warm food. Okay, but they are a salad bar. Can’t have everything..

While we were eating there outside, we attracted  a lot of Asian tourists to the place. I guess Asians follow Asians hah. Or people follow people, to keep is less racial. That should be a strategy for restaurants. People attract people, much like sheeps. Follow each other… If there are people, it must be good.

Eindhoven: The Happiness Café

A sweet little cafe has popped up in Eindhoven:

First impression

At first impression it looks cute with the logo and hart on the window.
Inside it looks so nice and hip:

Lovely designed menu card hanging in the back of the counter. People get all the time to watch. The counter has a lot of things to look at: ingredients for salads, mugs to buy, coffee maker in the back. And quite a lot of people are working behind the counter.

Chairs outside are made of wood and are also used inside. When the rain was pouring, the tables and chairs were inside. When the sun came out, the tables and chairs were put outside.

My little brother and I ordered a smoothie… It wasn’t very special, so that left me a scar.

Everything is designed so nice, so I was a bit disappointed that the beverage was only “meh”. Hopefully the other food is nice.

The Happiness CafĂ© offers some unique things: breakfasts, juices and detox stuff. You don’t find those a lot in the Netherlands. Their goal is to offer the people healthy, fresh, pure food. To make your body feel better and make you happy. Nice goal.
