Tsukemen at Yokohama Ramen Saito

It’s summertime! There is a new summer menu at Yokohama Ramen Saito, with dipping ramen aka tsukemen. In the past I had the chance to try it, but now it’s finally perfected.

After a lot of trial and error Toshimi Saitou is satisfied to serve it the customers. He focused a lot on perfecting the noodle taste and texture. 

It’s a totally different eating experience than normal ramen. The noodles and toppings are ‘cold’ in a bowl and you get a smaller bowl with piping hot soup. You take a bit of the ramen and toppings, dunk it in the soup and slurp it away. I tried the seafood and pork bone soy soup one and Lazy Bear had the curry pork bone soup.

I tried the noodles without dipping it in the soup; it was cold, firm and has a bland taste. When you dip the noodles in the soup, the soup clings nicely on the noodles. It gives it the right amount of salt taste and warms up the noodles. This soup is less heavy than the normal tonkotsu, I think because there is also fish in the soup broth. I also tasted the soup on its own and wooh, that was salty. Not recommended. After you are done with the noodles, you can either ask for more noodles, what Lazy Penguin did, or you can ask for extra soup to make your soup less salty. So you can drink the whole bowl and get a kanmaku stamp.

Curry pork bone soup

I also tried the curry soup and it’s not an overpowering curry taste, which I prefer. Lazy Bear also ordered a bowl of rice with the curry soup and he said it was nice to eat the rice with the curry soup.

There is also a seafood and pork bone miso, a tan tan spicy chicken and a vegetarian version of tsukemen. Luckily the summer menu will stay, even in winter, so we can try them all. Give it a try on your next visit to Yokohama Ramen Saito. Read here more about the ‘normal’ ramen.
