Mom makes these delicious 馅饼 chicken pie. A friend asked for the recipe, so here is the recipe:
Before preparing the dough and filling: soak vermicelli noodles till they are soft (about 30 min).
Making the dough
Ingredients:
- 500 gram flower (for 16 pieces of pancake)
- 1 small pack of yeast
- +/- 240 ~340 ml lukewarm water
- 1 teaspoon sugar (tsp)
- Mix 1 pack yeast with 240 ml lukewarm water + 1 tsp sugar. Let everything dissolve.
- Add the yeast-sugar water to the 500 gram flower. Mix (with your hand or machine) till a nice piece of dough. Add water if it’s too dry. Should not be too wet.
- Let is rise for about 30 min
- Mix again and let it rise for 1 hour. The dough size should double. (The rising speed also depends on the room temperature. Cold = slow rising, hot = fast rising.)
Prepare filling
Ingredients:
- 300 gram minced chicken
- 1 spring onion
- 1 tablespoon (tbsp) of ginger
- 1 (small) carrot
- About 5 leafs of pointed cabbage
- Already soaked vermicelli noodles
- Oil
- Light soy sauce
- Salt
- Cut small: spring onion, ginger.
- Cut in small strips of 3 cm and very thin: carrot, cabbage. Cut vermicelli in 3 cm
- Heat about 2-3 tablespoons of oil. Fry the spring onion and ginger first. Add 2 tablespoon light soy sauce.
- Add the minced chicken to the stir fry. Fry for a few minutes till 50% done
- Add cabbage, stir fry till cabbage is almost done.
- Add vermicelli to stir fry. Let the vermicelli soak in the sauce/water. Let the vermicelli become soft.
- Add 1 teaspoon of salt. Taste if it is salty enough.
- If there is a lot of water at the end of the stir fry, remove the excess water. We want dry filling. Let the filling cool off. (Optional: You can add some sesame oil to the filling if you like that fragrant smell.)
Make the 馅饼 meat pie
- After the dough has grown a lot after about 1.5 hour. Cut the dough in 16 pieces.
- Roll the 1 dough piece into a dumpling skin.
- Fill the dough with filling and close it like a baozi. Turn the baozi upside down and roll it flat. Let is sit for about 15 min to let the dough rise a little to fluffy.
- Put oil in the pan, not too much oil, just a layer is enough. Turn the heat to low-medium and wait till the oil is hot. Fry the baozi on one side about 3-4 minutes. If the top has become hard or yellow, turn upside down and fry for the other side 3 minutes. Frying time depends on how hot your pan is.
Enjoy with some soy sauce, Chinese vinegar or spicy sauce.
