3 cup dish – 三杯鸡

I learned about a delicious dish here in Taipei: sanbei or three cup ‘something’. This dish is made using three cups of taste makers: 1 cup sesame oil, 1 cup soy sauce and 1 cup of cooking wine. Further the dish has old ginger with skin, Thai basil, garlic and hot peppers.

You can add any meat, fish or other ingredient in there and it will have a delicious flavor.

I have eaten two variations: (三杯鸡) three cup chicken and (三杯鱿鱼) three cup octopus rings and pig’s blood rice cake. The pig’s blood rice cake is really nice; chewy and savoury.

How to cook

First heat up oil and stir fry the ginger, garlic and pepper till fragrant. Add any meat or fish. Add soy sauce, rice wine and sugar. Stir fry. Then when everything is done, remove the pan from the fire, add the Thai basil and cover the pan. The fragrance of the basil will stay inside. Serve with rice.

When I go back to the Netherlands I will try to cook it myself. Thai basil gives stir fry dishes a really nice fragrant. I am going to use it more in my cooking.
