This cucumber salad is very easy to make. I often make it as extra vegetable dish, when you need some veggie vitamins. I think it originates from China, since I learned it from my mother and adjusted it to my liking.
Ingredients:
- 1 cucumber
- 1 spring onion
- 1 tsp salt
Sauce:
- 1 tsp vinegar
- 3 tbsp oil + sesame oil
- 2 tbsp soy sauce
Extra:
- 1 tsp hot sauce (老干妈LaoGanMa)
Directions:
1 _ Cut spring onions. Put in a bowl.
2 _ Cut cucumber in 5cm long slices. Put in a bowl.
3 _ Mix 1 tsp (or less) salt in the cucumber bowl. Set cucumber bowl aside.
4 _ Add 2 tbsp oil and 1 tbsp sesame oil with the spring onions.
5 _ Microwave for 15 sec, with a paper towel over the bowl. This prevents splattering.
6 _ The spring onions are now fragrant, because of the hot oil. Add 2 tbsp soy sauce and 1 tsp vinegar. Mix.
7 _ Remove excess water from the cucumber. You can use a paper towel to soak it up.
8 _ Add sauce to cucumber. Taste and add more sauce if needed. Adjust to your liking.
Enjoy!
Instead of spring onion you can also use garlic. In China they use a lot of raw garlic. Garlic gives a more authentic taste, but beware: bad breath guaranteed.
